Jak ukazuje dokument \u201eZkorumpovan\u00fd potravin\u00e1\u0159sk\u00fd pr\u016fmysl\u201c, v z\u00e1kulis\u00ed pracuje mnoho sil na udr\u017een\u00ed sou\u010dasn\u00e9ho stavu.<\/span><\/p>\n<h2 class=\"wp-block-heading has-medium-font-size\"><strong><span dir=\"auto\">Iluze r\u016f\u017eov\u00e9ho masa<\/span><\/strong><\/h2>\n<p><span dir=\"auto\">V\u0161imli jste si, \u017ee kdy\u017e kupujete zpracovan\u00e9 maso, m\u00e1 v\u017edycky perfektn\u00ed r\u016f\u017eovou barvu? Pravd\u011bpodobn\u011b jste si mysleli, \u017ee je \u010derstv\u00e9, jak nazna\u010duj\u00ed reklamy, ale pravda je mnohem zlov\u011bstn\u011bj\u0161\u00ed.<\/span><\/p>\n<ul>\n<li><strong><span dir=\"auto\">Maso je vst\u0159ikov\u00e1no chemik\u00e1liemi<\/span><\/strong><span dir=\"auto\">\u00a0\u2013 Za z\u00e1\u0159iv\u011b r\u016f\u017eovou barvou zpracovan\u00e9ho masa se skr\u00fdv\u00e1 chemik\u00e1lie zvan\u00e1 E250, obchodn\u00ed n\u00e1zev pro dusitan sodn\u00fd.<\/span><\/li>\n<li><strong><span dir=\"auto\">\u00daloha E250 \u2013<\/span><\/strong><span dir=\"auto\">\u00a0Tato chemik\u00e1lie je zodpov\u011bdn\u00e1 za udr\u017een\u00ed r\u016f\u017eov\u00e9 barvy masa, ale je tak\u00e9 hlavn\u00edm d\u016fvodem jej\u00edch karcinogenn\u00edch vlastnost\u00ed. Bez t\u00e9to p\u0159\u00edsady by \u0161unka ve va\u0161em sendvi\u010di nebo na sv\u00e1te\u010dn\u00ed ve\u010de\u0159i vypadala matn\u011b a \u0161ed\u011b. Laurent Rouleau, kter\u00fd pracuje pro velk\u00e9ho zpracovatele masa ve Francii, vysv\u011btluje:<\/span><\/li>\n<\/ul>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul class=\"wp-block-list\">\n<li><em><span dir=\"auto\">\u201eDusitan sodn\u00fd se pou\u017e\u00edv\u00e1 ke konzervaci \u0161unky a huben\u00ed patogenn\u00edch bakteri\u00ed. Pou\u017e\u00edv\u00e1 se ale tak\u00e9 k tomu, aby zpracovan\u00e9mu masu dodal charakteristickou barvu a chu\u0165. Pr\u00e1v\u011b on d\u00e1v\u00e1 zpracovan\u00e9mu masu jeho lahodnou r\u016f\u017eovou barvu.\u201c<\/span><\/em><\/li>\n<\/ul>\n<\/li>\n<li><strong><span dir=\"auto\">R\u016f\u017eov\u00e9 maso je \u010dist\u011b pro marketingov\u00e9 \u00fa\u010dely<\/span><\/strong><span dir=\"auto\">\u00a0\u2013 jak potvrzuje dal\u0161\u00ed mluv\u010d\u00ed, kter\u00fd si p\u0159eje z\u016fstat v anonymit\u011b, dusitany se pou\u017e\u00edvaj\u00ed k odli\u0161en\u00ed produkt\u016f od nezpracovan\u00e9ho masa. Proto\u017ee pokud do \u0161unky neinjekuj\u00ed dusitany, vypad\u00e1 jednodu\u0161e jako pe\u010den\u00e9 vep\u0159ov\u00e9 maso:<\/span><\/li>\n<li style=\"list-style-type: none;\">\n<ul class=\"wp-block-list\">\n<li><em><span dir=\"auto\">\u201eDusitany jsou vlastn\u011b jedin\u00e1 v\u011bc. Jsou to jen kv\u016fli barv\u011b. Proto\u017ee \u0161unka mus\u00ed b\u00fdt r\u016f\u017eov\u00e1, ne hn\u011bd\u00e1. Jinak lid\u00e9 \u0159\u00edkaj\u00ed, \u017ee nen\u00ed \u010derstv\u00e1, a tak d\u00e1le. Kdy\u017e va\u0159\u00edm vep\u0159ov\u00e9, maso je \u0161ed\u00e9. Tak\u017ee takhle by \u0161unka m\u011bla vypadat.\u201c<\/span><\/em><\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<h2 class=\"wp-block-heading has-medium-font-size\"><span dir=\"auto\">Dusitany po\u0161kozuj\u00ed va\u0161i DNA a zp\u016fsobuj\u00ed rakovinu<\/span><\/h2>\n<p><span dir=\"auto\">Co d\u011bl\u00e1 dusitan sodn\u00fd ve va\u0161em t\u011ble? Odpov\u011b\u010f je jednoduch\u00e1:\u00a0<\/span><a href=\"https:\/\/articles.mercola.com\/sites\/articles\/archive\/2025\/04\/09\/harmful-chemicals-flooding-us-food-supply.aspx\" target=\"_blank\" rel=\"noreferrer noopener\"><span dir=\"auto\">Stejn\u011b jako v\u0161echny ostatn\u00ed pr\u016fmyslov\u011b zpracovan\u00e9 p\u0159\u00edsady<\/span><\/a><span dir=\"auto\">\u00a0nen\u00ed prosp\u011b\u0161n\u00fd pro va\u0161e zdrav\u00ed.<\/span><\/p>\n<ul>\n<li><strong><span dir=\"auto\">P\u0159\u00edsady \u0161kod\u00ed va\u0161emu zdrav\u00ed<\/span><\/strong><span dir=\"auto\">\u00a0\u2013 Jak je uvedeno v dokumentu, dusitan sodn\u00fd zabra\u0148uje hn\u011bdnut\u00ed masa v d\u016fsledku oxidace. I kdy\u017e ni\u010d\u00ed \u0161kodliv\u00e9 bakterie a prodlu\u017euje trvanlivost, zp\u016fsobuje v\u00e1\u017en\u011bj\u0161\u00ed zdravotn\u00ed probl\u00e9my. Theo de Kok, Ph.D., profesor na Maastrichtsk\u00e9 univerzit\u011b v Nizozemsku, vysv\u011btluje:<\/span><\/li>\n<\/ul>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul class=\"wp-block-list\">\n<li><em><span dir=\"auto\">\u201eNitrosaminy jsou zn\u00e1m\u00e9 t\u00edm, \u017ee zp\u016fsobuj\u00ed po\u0161kozen\u00ed tlust\u00e9ho st\u0159eva. Mohou zp\u016fsobit zlomy DNA a mutovat bu\u0148ky do jak\u00e9hosi prekancer\u00f3zn\u00edho stavu. A tomu je samoz\u0159ejm\u011b t\u0159eba p\u0159edch\u00e1zet.\u201c<\/span><\/em><\/li>\n<\/ul>\n<\/li>\n<li><strong><span dir=\"auto\">Testov\u00e1n\u00ed \u00fa\u010dink\u016f p\u0159\u00edsad \u2013<\/span><\/strong><span dir=\"auto\">\u00a0De Kok, zv\u011bdav\u00fd na \u00fa\u010dinky dusitan\u016f na lidi v akademick\u00e9m prost\u0159ed\u00ed, provedl vlastn\u00ed experiment se studentem jm\u00e9nem Arnaud. Po dobu dvou t\u00fddn\u016f jedl Arnaud denn\u011b 300 gram\u016f zpracovan\u00e9ho masa, co\u017e odpov\u00edd\u00e1 asi osmi a p\u016fl klob\u00e1s\u00e1m nebo sedmi pl\u00e1tk\u016fm \u0161unky. Zde je to, co de Kok n\u00e1sledn\u011b zjistil:<\/span><\/li>\n<\/ul>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul class=\"wp-block-list\">\n<li><em><span dir=\"auto\">\u201ePo 15 dnech jsme zjistili, \u017ee hladiny nitrosamin\u016f se v\u00fdrazn\u011b zv\u00fd\u0161ily. Ve srovn\u00e1n\u00ed s hodnotami, kter\u00e9 jsme nam\u011b\u0159ili na za\u010d\u00e1tku, se zv\u00fd\u0161ily dvakr\u00e1t a\u017e t\u0159ikr\u00e1t.\u201c<\/span><\/em><\/li>\n<\/ul>\n<\/li>\n<li><strong><span dir=\"auto\">Potvrzeno po\u0161kozen\u00ed DNA<\/span><\/strong><span dir=\"auto\">\u00a0\u2013 Po prozkoum\u00e1n\u00ed r\u016fzn\u00fdch vzork\u016f stolice od spot\u0159ebitel\u016f zpracovan\u00e9ho masa, v\u010detn\u011b Arnauda, \u200b\u200bje de Kok p\u0159esv\u011bd\u010den, \u017ee dusitany po\u0161kozuj\u00ed DNA. Po\u0161kozen\u00ed bylo skute\u010dn\u011b okam\u017eit\u011b pozorov\u00e1no v lidsk\u00fdch testovac\u00edch bu\u0148k\u00e1ch:<\/span><\/li>\n<\/ul>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul class=\"wp-block-list\">\n<li><em><span dir=\"auto\">\u201eToto po\u0161kozen\u00ed m\u016f\u017ee b\u00fdt zp\u016fsobeno relativn\u011b rychle. V tomto testu izolujeme bu\u0148ky a inokulujeme je na pouhou p\u016flhodinu a okam\u017eit\u011b m\u016f\u017eete vid\u011bt zlomy v t\u011bchto \u0159et\u011bzc\u00edch DNA. M\u016f\u017ee se to st\u00e1t tak rychle. A to nejen tady v laborato\u0159i, ale i v neporu\u0161en\u00e9m lidsk\u00e9m t\u011ble.\u201c<\/span><\/em><\/li>\n<\/ul>\n<\/li>\n<li><strong><span dir=\"auto\">Zpracovan\u00e9 maso zvy\u0161uje riziko rakoviny \u2013<\/span><\/strong><span dir=\"auto\">\u00a0Podle de Koka dusitany v\u00fdznamn\u011b p\u0159isp\u00edvaj\u00ed k ka\u017edoro\u010dn\u00edmu n\u00e1r\u016fstu p\u0159\u00edpad\u016f rakoviny tlust\u00e9ho st\u0159eva v Evrop\u011b. Dokonce se domn\u00edv\u00e1, \u017ee odstran\u011bn\u00ed dusitan\u016f ze zpracovan\u00e9ho masa by tato \u010d\u00edsla v\u00fdrazn\u011b sn\u00ed\u017eilo:<\/span><\/li>\n<li style=\"list-style-type: none;\">\n<ul class=\"wp-block-list\">\n<li><em><span dir=\"auto\">\u201eTo by v Evrop\u011b znamenalo rozd\u00edl potenci\u00e1ln\u011b o n\u011bkolik tis\u00edc p\u0159\u00edpad\u016f kolorekt\u00e1ln\u00edho karcinomu ro\u010dn\u011b. To je obrovsk\u00e9. Proto\u017ee kolorekt\u00e1ln\u00ed karcinom je velmi \u010dast\u00e9 onemocn\u011bn\u00ed, i mal\u00e9 zm\u011bny v riziku rakoviny mohou m\u00edt velk\u00fd dopad na celkovou populaci.\u201c<\/span><\/em><\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<h2 class=\"wp-block-heading has-medium-font-size\"><span dir=\"auto\">Maso nemus\u00ed p\u0159ij\u00edt do kontaktu s dusitany<\/span><\/h2>\n<p><span dir=\"auto\">Navzdory rostouc\u00edmu mno\u017estv\u00ed d\u016fkaz\u016f proti dusitan\u016fm je potravin\u00e1\u0159sk\u00fd pr\u016fmysl nad\u00e1le pou\u017e\u00edv\u00e1 s jasn\u00fdm argumentem, kter\u00fd nut\u00ed zdravotnick\u00e9 org\u00e1ny odvracet zrak: prevence botulismu. Tato logika m\u00e1 v\u0161ak jeden h\u00e1\u010dek.<\/span><\/p>\n<ul>\n<li><strong><span dir=\"auto\">Maso lze zpracov\u00e1vat bez dusitan\u016f<\/span><\/strong><span dir=\"auto\">\u00a0\u2013 Podle dokumentace nyn\u00ed existuje n\u011bkolik firem, kter\u00e9 vyr\u00e1b\u011bj\u00ed masn\u00e9 v\u00fdrobky bez zbyte\u010dn\u00fdch p\u0159\u00edsad a jejich z\u00e1kazn\u00edci nemaj\u00ed \u017e\u00e1dn\u00e9 zdravotn\u00ed probl\u00e9my.<\/span><\/li>\n<li><strong><span dir=\"auto\">V\u00fdrobky bez dusitan\u016f jsou \u0161iroce dostupn\u00e9 i v jin\u00fdch zem\u00edch \u2013<\/span><\/strong><span dir=\"auto\">\u00a0Hanegal, v\u00fdrobce masa se s\u00eddlem v D\u00e1nsku, nab\u00edz\u00ed sv\u00fdm z\u00e1kazn\u00edk\u016fm klob\u00e1sy bez dusitan\u016f ji\u017e v\u00edce ne\u017e 25 let. Navzdory tvrzen\u00edm v\u00fdrobc\u016f zpracovan\u00e9ho masa, \u017ee dusitany zabra\u0148uj\u00ed botulismu, nebyl v D\u00e1nsku zaznamen\u00e1n jedin\u00fd p\u0159\u00edpad botulismu spojen\u00fd s v\u00fdrobky bez dusitan\u016f. Ulrich Kern, gener\u00e1ln\u00ed \u0159editel spole\u010dnosti Hanegal, vysv\u011btluje:<\/span><\/li>\n<\/ul>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul class=\"wp-block-list\">\n<li><em><span dir=\"auto\">\u201eToto byl probl\u00e9m v masn\u00e9m pr\u016fmyslu p\u0159ed 100 lety, kdy hygienick\u00e9 standardy nebyly tak vysok\u00e9 a jatka nebyla tak \u010dist\u00e1 jako dnes. Tak\u017ee se nemus\u00edte b\u00e1t bakteri\u00ed. Nyn\u00ed se mus\u00edme ob\u00e1vat p\u0159\u00edsad, kter\u00e9 by mohly b\u00fdt karcinogenn\u00ed. A pokud nejsou nezbytn\u00e9 z velmi dobr\u00fdch d\u016fvod\u016f, nem\u011bli bychom je pou\u017e\u00edvat.\u201c<\/span><\/em><\/li>\n<\/ul>\n<\/li>\n<li><strong><span dir=\"auto\">Jak naj\u00edt \u010dist\u00e9, uzen\u00e9 maso \u2013<\/span><\/strong><span dir=\"auto\">\u00a0V D\u00e1nsku jsou masn\u00e9 v\u00fdrobky bez dusitan\u016f ozna\u010deny jako \u201euden \u200b\u200bnitrit\u201c. Dokumentace uv\u00e1d\u00ed, \u017ee v\u00fdrobky v t\u00e9to kategorii se zdaj\u00ed b\u00fdt sp\u00ed\u0161e nahn\u011bdl\u00e9 ne\u017e r\u016f\u017eov\u00e9, jak jsou spot\u0159ebitel\u00e9 zvykl\u00ed.<\/span><\/li>\n<\/ul>\n<h2 class=\"wp-block-heading has-medium-font-size\"><span dir=\"auto\">Pro\u010d z\u00e1kaz dusitanu sodn\u00e9ho selhal<\/span><\/h2>\n<p><span dir=\"auto\">Ji\u017e v roce 1999 doporu\u010dila zpr\u00e1va Evropsk\u00e9 unie o zdrav\u00ed sn\u00ed\u017een\u00ed hladiny dusitanu sodn\u00e9ho ve zpracovan\u00fdch masn\u00fdch v\u00fdrobc\u00edch a dokonce po\u017eadovala z\u00e1kaz jeho pou\u017e\u00edv\u00e1n\u00ed. Kv\u016fli byrokracii a z\u00e1ke\u0159n\u00fdm taktik\u00e1m producent\u016f masa v\u0161ak toto z\u016fst\u00e1v\u00e1 nedosa\u017eiteln\u00fdm snem.<\/span><\/p>\n<ul>\n<li><strong><span dir=\"auto\">Pro\u010d hladiny dusitan\u016f neklesaj\u00ed<\/span><\/strong><span dir=\"auto\">\u00a0\u2013 Dr. Vytenis Andriukaitis, poslanec Evropsk\u00e9ho parlamentu (EU), vysv\u011btluje, \u017ee dalekos\u00e1hl\u00e1 rozhodnut\u00ed, jako je odstran\u011bn\u00ed dusitan\u016f z masa, vy\u017eaduj\u00ed spoustu pr\u00e1ce:<\/span><\/li>\n<li style=\"list-style-type: none;\">\n<ul class=\"wp-block-list\">\n<li><em><span dir=\"auto\">\u201ePodle m\u00e9ho n\u00e1zoru mus\u00edme b\u00fdt d\u016frazn\u011bj\u0161\u00ed v po\u017eadavc\u00edch, aby pr\u016fmysl zm\u011bnil svou technologii, vyvinul nov\u00e9 receptury, dr\u017eel se \u010d\u00edsel a up\u0159ednost\u0148oval ve\u0159ejn\u00e9 zdrav\u00ed, nikoli zisk. To je zcela jasn\u00e9. Ale to samoz\u0159ejm\u011b vy\u017eaduje \u010das.\u201c<\/span><\/em><\/li>\n<\/ul>\n<\/li>\n<li><strong><span dir=\"auto\">Masn\u00fd pr\u016fmysl je nedotknuteln\u00fd \u2013<\/span><\/strong><span dir=\"auto\">\u00a0V\u011bd\u011bli jste, \u017ee Spojen\u00e9 st\u00e1ty v 70. letech 20. stolet\u00ed t\u00e9m\u011b\u0159 zak\u00e1zaly dusitan sodn\u00fd? V\u0161echno to za\u010dalo vl\u00e1dou financovanou studi\u00ed provedenou na 2 000 krys\u00e1ch. V\u011bdci zjistili jasnou souvislost mezi konzumac\u00ed dusitan\u016f a rakovinou u t\u011bchto zv\u00ed\u0159at, co\u017e vyvolalo poplach v oblasti ve\u0159ejn\u00e9ho zdrav\u00ed. To vedlo k okam\u017eit\u00fdm krok\u016fm k z\u00e1kazu dusitan\u016f v potravin\u00e1ch ur\u010den\u00fdch k lidsk\u00e9 spot\u0159eb\u011b.
