Na\u0161t\u011bst\u00ed, existuje n\u011bkolik zdrav\u00e9 n\u00e1hrady, kter\u00fdmi m\u016f\u017eete tyto \u0161kodliv\u00e9 oleje p\u0159i p\u0159\u00edprav\u011b j\u00eddel nahradit.<\/strong><\/p>\n<p><span>Jak p\u0159esn\u011b pr\u016fmyslov\u011b p\u011bstovan\u00e1 semena az nich vyr\u00e1b\u011bn\u00e9 rostlinn\u00e9 oleje podkop\u00e1vaj\u00ed va\u0161e zdrav\u00ed?<\/span><\/p>\n<p><span>Podle studie publikovan\u00e9 v \u010dasopise Open Heart (Otev\u0159en\u00e9 srdce) na vin\u011b je kyselina linolov\u00e1 v rostlinn\u00e9m oleji, proto\u017ee snadno oxiduje a m\u011bn\u00ed se na zoxidovan\u00e9 metabolity kyseliny linolov\u00e9 (OXLAMS).<\/span><\/p>\n<p><span>Tyto OXLAMS l\u00e1tky vyvol\u00e1vaj\u00ed ateroskler\u00f3zu (kornat\u011bn\u00ed c\u00e9v) a srde\u010dn\u00ed choroby. Z toho vypl\u00fdv\u00e1, \u017ee sn\u00ed\u017een\u00ed spot\u0159eby rostlinn\u00fdch olej\u016f tak\u00e9 sn\u00ed\u017e\u00ed mno\u017estv\u00ed vznikaj\u00edc\u00edch OXLAMS l\u00e1tek.<\/span><\/p>\n<p><span>Certifikovan\u00e1 odbornice na v\u00fd\u017eivu Kerry Torrensov\u00e1 sd\u00edlela n\u011bkolik alternativ k rostlinn\u00fdm olej\u016fm, kter\u00e9 krom\u011b zdravotn\u00ed nez\u00e1vadnosti nab\u00edzej\u00ed nav\u00edc i dal\u0161\u00ed zdravotn\u00ed p\u0159\u00ednosy pro v\u00e1s a va\u0161i rodinu.<\/span><\/p>\n<h2><span>Avok\u00e1dov\u00fd olej<\/span><\/h2>\n<p><span>Tento olej lisovan\u00fd z plod\u016f avok\u00e1dov\u00e9ho stromu se \u010dasto p\u0159irovn\u00e1v\u00e1 k\u00a0<\/span><a href=\"https:\/\/www.badatel.net\/falosny-olivovy-olej-je-vsade-ako-rozlisit-pravy-od-pancovaneho\/\"><span>olivov\u00e9mu oleji<\/span><\/a><span>\u00a0. Je bohat\u00fd na mononenasycen\u00e9 mastn\u00e9 kyseliny (MUFA), zejm\u00e9na kyselinu olejovou, kter\u00e1 zvy\u0161uje stabilitu oleje p\u0159i vysok\u00fdch teplot\u00e1ch.<\/span><\/p>\n<p><a href=\"https:\/\/www.mdpi.com\/1420-3049\/24\/11\/2172\"><span>Studie<\/span><\/a><span>\u00a0publikovan\u00e1 v roce 2019 v \u010dasopise Molecules uvedla, \u017ee t\u00e9m\u011b\u0159 70 procent avok\u00e1dov\u00e9ho oleje sest\u00e1v\u00e1 z kyseliny olejov\u00e9, kter\u00e1 je zdrav\u00e1 pro srdce a tak\u00e9 mononenasycen\u00e9 omega-9 mastn\u00e9 kyseliny.<\/span><\/p>\n<p><span>Vysok\u00fd bod ho\u0159en\u00ed rafinovan\u00e9ho i nerafinovan\u00e9ho avok\u00e1dov\u00e9ho oleje jej \u010din\u00ed ide\u00e1ln\u00edm pro va\u0159en\u00ed. Jeho jemn\u00e1 chu\u0165 tak\u00e9 umo\u017e\u0148uje, aby ve va\u0161em receptu vynikly i ostatn\u00ed suroviny.<\/span><\/p>\n<h2><span>Olivov\u00fd olej<\/span><\/h2>\n<p><span>Olivov\u00fd olej se vyr\u00e1b\u00ed ze \u0161\u0165\u00e1vy oliv a je zn\u00e1m sv\u00fdmi mnoha zdravotn\u00edmi p\u0159\u00ednosy \u2013 od ochrany p\u0159ed srde\u010dn\u00edmi chorobami a\u017e po sn\u00ed\u017een\u00ed rizika vzniku diabetu 2. typu.<\/span><\/p>\n<p><span>Kyselina olejov\u00e1, p\u0159evl\u00e1daj\u00edc\u00ed mononenasycen\u00e1 mastn\u00e1 kyselina (MUFA) nach\u00e1zej\u00edc\u00ed se v olivov\u00e9m oleji, m\u00e1 50kr\u00e1t men\u0161\u00ed pravd\u011bpodobnost oxidace ne\u017e kyselina linolov\u00e1, p\u0159evl\u00e1daj\u00edc\u00ed polynenasycen\u00e1 mastn\u00e1 kyselina (PUFA) nach\u00e1zej\u00edc\u00ed se v rostlinn\u00fdch olej\u00edch, jako jsou kuku\u0159i\u010dn\u00fd, \u0159epkov\u00fd.<\/span><\/p>\n<p><span>Panensk\u00fd olivov\u00fd olej je dobr\u00fd pro va\u0159en\u00ed p\u0159i teplot\u00e1ch mezi 180 a\u017e 190 stup\u0148\u016f Celsia. Krom\u011b toho, \u017ee va\u0161im j\u00eddl\u016fm dod\u00e1v\u00e1 jedine\u010dnou chu\u0165, panensk\u00fd olivov\u00fd olej obsahuje antioxidanty, jako je vitam\u00edn E a dal\u0161\u00ed.<\/span><\/p>\n<p><span>Uv\u00e1d\u00ed se, \u017ee extra panensk\u00fd olivov\u00fd olej m\u00e1 nejni\u017e\u0161\u00ed m\u00edru oxidace ze v\u0161ech olej\u016f na va\u0159en\u00ed.<\/span><\/p>\n<p><span>Tento olej se vyr\u00e1b\u00ed z \u010dist\u00fdch, za studena lisovan\u00fdch oliv a je ide\u00e1ln\u00ed volbou p\u0159i dom\u00e1c\u00edm va\u0159en\u00ed \u2013 d\u00e1vejte si v\u0161ak pozor na p\u0159ep\u00e1len\u00ed, nebo\u0165 m\u00e1 pom\u011brn\u011b n\u00edzk\u00fd bod ho\u0159en\u00ed nach\u00e1zej\u00edc\u00ed se mezi 200 a\u017e 240 stupni Celsia, podle druhu olivov\u00e9ho oleje.<\/span><\/p>\n<h2><span>M\u00e1slo<\/span><\/h2>\n<p><span>M\u00e1slo je sou\u010d\u00e1st\u00ed lidsk\u00e9 stravy ji\u017e odprad\u00e1vna, v\u00edcem\u00e9n\u011b od \u010dasu domestikace savc\u016f (kr\u00e1vy, kozy, ovce). Z\u00edsk\u00e1v\u00e1 se z mucen\u00ed ml\u00e9ka nebo smetany a nejprve se p\u0159ipravovalo z ov\u010d\u00edho ml\u00e9ka. V sou\u010dasnosti se m\u00e1slo vyr\u00e1b\u00ed p\u0159ev\u00e1\u017en\u011b z ml\u00e9ka od krav.<\/span><\/p>\n<p><span>M\u00e1slo obsahuje mno\u017estv\u00ed \u017eivin rozpustn\u00fdch v tuc\u00edch, jako jsou vitam\u00edny K2, A, D a E. Neobsahuje ani lakt\u00f3zu a b\u00edlkovinu kasein, d\u00edky \u010demu\u017e je gh\u00ed dobrou volbou pro lidi s intoleranc\u00ed na lakt\u00f3zu nebo alergi\u00ed na ml\u00e9ko.<\/span><\/p>\n<p><span>Studie v\u00fdzkumn\u00edk\u016f z Univerzity Putra v Malajsii zkoumala gh\u00ed a rostlinn\u00e9 oleje, kdy\u017e byly vystaveny teplot\u011b 180 stup\u0148\u016f Celsia. Zjistilo se, \u017ee gh\u00ed vytv\u00e1\u0159\u00ed m\u00e9n\u011b \u0161kodliv\u00fdch akrylamid\u016f v porovn\u00e1n\u00ed s rostlinn\u00fdmi oleji.<\/span><\/p>\n<p><span>Akrylamidy jsou chemik\u00e1lie, kter\u00e9 se tvo\u0159\u00ed, kdy\u017e se \u0161krobov\u00e9 potraviny jako brambory a pe\u010divo pe\u010dou nebo sma\u017e\u00ed p\u0159i teplot\u00e1ch nad 120 stup\u0148\u016f Celsia.<\/span><\/p>\n<h2><span>Vep\u0159ov\u00e9 s\u00e1dlo<\/span><\/h2>\n<p><span>Vep\u0159ov\u00e9 s\u00e1dlo se vyr\u00e1b\u00ed \u0161kva\u0159en\u00edm \u2013 va\u0159en\u00edm, pa\u0159en\u00edm nebo such\u00fdm teplem \u2013 vep\u0159ov\u00e9ho tuku ze zbytk\u016f \u017eivo\u010di\u0161n\u00e9 tk\u00e1n\u011b. Neoxiduje p\u0159i vysok\u00fdch teplot\u00e1ch a m\u00e1 pom\u011brn\u011b vysok\u00fd bod ho\u0159en\u00ed a\u017e 190 stup\u0148\u016f Celsia.<\/span><\/p>\n<p><span>Na rozd\u00edl od tvrzen\u00ed, \u017ee vep\u0159ov\u00e9 s\u00e1dlo je nezdrav\u00e9, obsahuje druh\u00e9 nejvy\u0161\u0161\u00ed mno\u017estv\u00ed mononenasycen\u00fdch mastn\u00fdch kyselin (MUFA), a to 48 procent. Vep\u0159ov\u00e9 s\u00e1dlo je tak\u00e9 skv\u011bl\u00fdm zdrojem cholinu \u2013 \u017eiviny, kterou v\u00e1\u0161 mozek a nervov\u00fd syst\u00e9m pot\u0159ebuj\u00ed k regulaci pam\u011bti, n\u00e1lady, svalov\u00e9 kontroly a dal\u0161\u00edch t\u011blesn\u00fdch funkc\u00ed.<\/span><\/p>\n<p><span>Vep\u0159ov\u00e9 s\u00e1dlo obsahuje od 102 do 399 miligram\u016f cholinu na \u0161\u00e1lek, v z\u00e1vislosti na tom, jak byla prasata chov\u00e1na.<\/span><\/p>\n<p><span>Vep\u0159ov\u00e9 s\u00e1dlo vyroben\u00e9 z prasat chovan\u00fdch podle z\u00e1sad ekologick\u00e9ho chovatelstv\u00ed bude pravd\u011bpodobn\u011b obsahovat podstatn\u011b v\u00edce cholinu ne\u017e ty, kter\u00e9 se chovaj\u00ed konven\u010dn\u00edm zp\u016fsobem.<\/span><\/p>\n<h2><span>L\u016fj<\/span><\/h2>\n<p><span>Zat\u00edmco vep\u0159ov\u00e9 s\u00e1dlo se vyr\u00e1b\u00ed z vep\u0159ov\u00e9ho masa, l\u016fj se vyr\u00e1b\u00ed z loje (hov\u011bz\u00edho tuku), kter\u00fd byl z\u010de\u0159en\u00fd a \u0161kva\u0159en\u00fd.<\/span><\/p>\n<p><span>L\u016fj se m\u016f\u017ee pochlubit vysok\u00fdm bodem ho\u0159en\u00ed a\u017e 204 stup\u0148\u016f Celsia, d\u00edky \u010demu\u017e je vynikaj\u00edc\u00ed volbou pro sma\u017een\u00ed, du\u0161en\u00ed a op\u00e9k\u00e1n\u00ed masa.
